It's nice to have it done fast, but how does it get any of that amazing flavor without a few hours of steep time in a crock pot? At that point it'd just be bare pork plus sauce?

While it would obviously taste different than pulled pork in a smoker, its basically exactly the same as doing it in a crock pot. I even used a slow cooker sauce packet when I cooked.

Only took 90 minutes in my Instant Pot which is crazy fast for pulled pork. Turned out great too.
