One of my new years resolutions is to learn to cook 6 new dishes. I did chicken katsu curry already and will do it again soon-ish (learned some things the first time, gonna change it up the second time so it comes out better).

I just made a pot roast for the first time and it was super easy. Do you have a crock pot?

I followed this recipe, except I subbed avocado oil for the olive oil and I added potatoes. I'm newish to cooking myself and while I was anxious handling such a large piece of meat (4 lb Chuck) this recipe was easy and turned out great

Oh also it's a good idea to learn how to make omelettes. That's often my trash breakfast, like, got veggies or herbs that I need to use up, chop it up and throw it in an omelette and suddenly you fancy lol

oh also I always forget to mention but I use a shit ton more salt in this recipe than what it calls for.

I typically use more salt in general than recipes call for / at more steps (but this recipe stands out), but that's something you figure out the more you cook.

also I would just find a loaf recipe that's meant to be a loaf. Those typically have different herbs. Shepherds pie is fun to make :) I like to sprinkle paprika on the top just to make it prettier lol

also changed my mind what I'm cooking on Friday. What pasta do y'all think I should serve with this? I typically like linguine, but I'm not really well versed for what pasta goes with what kinda sauce/dish

I don't mind I've been meaning to cook more as up until last year I was limited to spaghetti, hamburgers, and French toast lol. I've expanded my ability quite a bit but still have a ton to learn. Have yet to cook with chicken because the thought of undercooking it freaks me out

I made the salmon @hockey7318 recommended. I found a recipe here:

Lesson learned: use the equipment they tell you to. I need a broiling pan apparently. It was super simple otherwise.

The salmon broke when I transferred it to my plate. The other stuff is cauliflower rice and veggies because I'm trying to eat less rice.

pound italian seasoning on it
Parmesan cheese (but you'll be a fatty)

That's it. Sometimes, I get the arugula and it actually tastes good and adds a lot of character. But then I have too much arugula in the fridge for 1 bachelor.

I have eyeballed it before. Though, I will measure when I can (if I want to). But I usually end up taking out things I don't want (or can't have), and usually add more cheese. But it really just depends on what I'm cooking...

I recommend shirataki rice was well. I thought that had a bit more of a satisfying chewy texture compared to cauliflower rice and didn't have the cauli taste. Jambalaya was a good recipe for that that I've made.

Another of my favorites is tuna steaks where you brown up some sesame seeds first, dip the edges of the tuna steaks in soy sauce then coat the edges of the tuna in the sesame seeds. Cook for a couple minutes a side and its done. Fast, easy, and so damn delicious.

I used to use that one for showing off my cooking abilities to people I was dating. Now I make it whenever the wife is craving it.

I used a cookie sheet too. But there was a sudden POP while it was cooking, and when I turned the oven-light on, the sheet had warped. It went back afterwards, but that did startle me.

Anywho, I put a lot of these dishes in my calendar (goes up until March so far, and I haven't even finished entering everything!). I have chicken katsu curry this week. I couldn't get the golden brown on the chicken last time, but I read a tip about putting the panko bread crumbs in the toaster oven for a bit before coating. Hopefully that works!

Another easy fish recipe I like is get salmon or steelhead trout (I prefer that trout, it's less fishy tasting imo and very similar to salmon) and bake it in the oven w/ a little olive oil, garlic, dill, rosemary, and lemon wedges on top (squeeze lemon juice all over from those when ready to eat)

again, miso ginger salmon is great

My usual side is either broccolini or brussel sprouts, roasted until crispy w/ shallots+garlic+olive oil, then tossed w/ some red wine vinegar+honey or maple syrup and a little bit of balsamic glaze

I like to make this chimichurri sauce (I chop it myself very very finely, didn't like how it turned out using a food processor) and do bowls with grilled/baked chicken cubed, sweet potato cubes roasted w/ chile powder, black beans, feta, and rice (cauliflower would be fine here since it's not really the main thing) and it's delicious
