okay the theme of this post is keep it not too complex and keep it not too heavy! (sorry if I fail at either of those)

and I avoided things that were like rice bowls, which are a lot of my simpler dishes unfortunately >_>

Another easy fish recipe I like is get salmon or steelhead trout (I prefer that trout, it's less fishy tasting imo and very similar to salmon) and bake it in the oven w/ a little olive oil, garlic, dill, rosemary, and lemon wedges on top (squeeze lemon juice all over from those when ready to eat)

again, miso ginger salmon is great

My usual side is either broccolini or brussel sprouts, roasted until crispy w/ shallots+garlic+olive oil, then tossed w/ some red wine vinegar+honey or maple syrup and a little bit of balsamic glaze

I like to make this chimichurri sauce (I chop it myself very very finely, didn't like how it turned out using a food processor) and do bowls with grilled/baked chicken cubed, sweet potato cubes roasted w/ chile powder, black beans, feta, and rice (cauliflower would be fine here since it's not really the main thing) and it's delicious

^ chimichurri is also really good with a flank steak or shrimp

blackened catfish with cajun spices is nice and simple
