As far as gameplay goes I'll say Resident Evil 4 or Grand Theft Auto: San Andreas.

For storytelling in games, definitely Silent Hill 2.

MGS or OoT (released very close together and both - for different reasons - made most of their contemporaries look a half-decade behind).

For single player gaming anyway. For online multiplayer probably DOTA2.

The Portopia Serial Murder Case (scenario writing in games)
Dragon Quest V (major instance of player choice, popularizing monster/collectable party members)
Super Mario 64 (obvious reasons)
Metal Gear Solid (story/cinematic presentation)
Halo 2 (Accessible online focus becoming the standard)

Objective answers are probably Super Mario Bros, Doom, Goldeneye, Mario 64, GTA3, WoW, or Metal Gear Solid. All of them defined their genres in incredible ways and unquestionably raised the bar.

Halo and Minecraft were revolutionary too, I guess. But they mostly caused awful trends by copycats trying to recapture the magic those games had by copying the gimmicks without capturing the actual souls of the game and what made them so good. Specifically, Halo started the trend of regenerating health and very limited weapon inventory, and Minecraft is the reason every goddamn game under the sun has a tacked-on and completely unnecessary crafting/breakable item mechanic. I'm not criticizing those two games. I'm criticizing all the awful trend followers that failed to understand what actually mattered about them and what made them what they are.

Yeah, but the games that followed my first list were usually pretty good and expanded the genres. The FPSs after Doom and Goldeneye, the platformers after Mario's particularly revolutionary titles, and the open world games that followed the GTA games, and even some MMOs after WoW. A ton of those "copycats" were absolutely fantastic. But the games that simply copied regenerating health, two weapon limits and crafting, tend to be pretty soulless and derivative.
