They straight up lie to people telling them they can make stuff better than michelin starred restaurants.

I'm talking about Adam Ragusea, Joshua Weissman, Pro Home Cooks, etc.

You don't have the skillset or the knowledge required to even come close to preparing a professional meal, even with some hipster guiding you step by step.

That's why all I watch lately is You Suck At Cooking. Now THAT is quality content.

The only English cooking channels I watch is Pailin's Kitchen for Thai food, I even bought her cookbook and Food Wishes (tho it's been like 2 years since I watched it)

For Swedish I follow an actual chef who has fine dining restaruants (but he doesn't cook fine dining for the channel) and a previous contestant on Swedish Master Chef.

I watch a lot of cooking videos, including the ones you mentioned, and none of them say you can cook better than michelin stared chefs.

Adam Regusea teaches people the fundamentals about everything cooking related.

Joshua Weissman says you can cook better than fast food in a lot of his videos.

I dont get this criticism at all.

I like them because they go into the science of food and why stuff works or doesn't work.

It's a large difference between traditional chefs like MPW, Ramsay etc who call out ingredients in vague terms and cook by instinct.

I've grown to like a couple channels. Sam The Cooking Guy, Glen and Friends, and Not Another Cooking Show. Every now and then Joshua Weissman, Ethan Chlebowski, and Pro Home cooks. Though Joshua has a bit of an attitude.

Once in a while I'll watch Alex, or Gordon Ramsey. Matty is pretty good as well.

I hate most of those guys but mainly because they give off a super smug vibe. Their information is good, though.

I havent heard any of them say you can prepare Michelin quality food at home, either. I've heard them say you can make good as good as restaurant food and better than most, which is entirely true. If you have the time and patience.

Restaurant quality food has less to do with amazing skill and more to do with scaling and cost reducing and being time efficient. Theres nothing magical about a grill house steak. Whats magical is that they can cook 200 steaks in 2 hours all within a very narrow margin of error and within 10 minutes of the order being made.

P.s. the OG is kenji. Most of these guys just copy his ideas.

I've wanted to get more into cooking, so I started a project where every weekend of 2021 I've been making 1-3 new dishs 100% from scratch. No premade sauce and doughs, no frozen things, everything from scratch. Joshua Weissman has been my main source for this because he goes unnecessarily extra on everything, and I follow his recipes word for word, including getting all these weird and expensive ingredients (I've had to make a few exceptions when I couldn't find some stuff). Everything I've made has come out incredible, and I learn a lot about cooking by doing it this way. I don't think he's ever said he's better than michelin starred restaurants, he just says he's better than fast food or chain restaurants. I don't mind the arrogant tone he puts on (which is for show, as he's not like that in videos not on his channel) because he has the skills to back it up, plus you can just watch the middle of the video for the recipe and ignore the intro and ending.

Some other sources of recipes I use are Sam the Cooking Guy and Preppy Kitchen, although Preppy Kitchen is mainly about baking and deserts. I also look at J. Kenji Lpez-Alt and Binging with Babish occasionally.

TC, where does Joshua Weissman lie about anything on his channel? I've made many of the dishes he shows on his channel and every single one of them has been excellent to say the least. If there's a single minor inaccuracy somewhere in what he's saying, but the recipes are really good (they definitely are) why the fuck would you say you hate it? Pro Home Cooks is really good as well and has great tips and recipes. I could only cook very basic stuff in 2019 but after 2 years of watching videos from channels like the ones you describe. I've learned an incredible amount and can cook 35-40 more dishes than before I started. TC it sounds like you're just a negative person who hates stuff for nitty gritty reasons.

Joshua Weissman was a professional chef, who worked in one of the most prestigious Japanese restaurants in Austin TX. It sounds more like you have zero knowledge about what you're talking about.

Joshua Weissman is a fantastic chef. He's also annoying as fuck, which makes it doubly annoying, and takes so long to make anything your home chef will starve to death in the process.

That aside, I don't know that we really need to compete with michelin star restaurants. Nobody eats at those places everyday for lunch. We're competing with Applebees, Mcdonalds, your local burger place, and throwing a plain chicken in the oven.

And, frankly, my wife is hardly a master chef, but she's made a number of dishes at home that surpass those same foods when I've eaten them at restaurants. She's made me a new york cheesecake from a cookbook she was recommended, and jesus christ, every other cheesecake I eat now feels lacking, it's that damn good. It's far from impossible.

The only Ragusea video I have ever seen was I believe and onion chopping one. Shows you that you dont need to cut like a chef, speed is only needed if you are cutting hundreds if not thousands of onions at a restaurant. Chop safe and slow is a good way to go.

Also, Ethan Chlebowski is great, learned a lot of techniques from him, and Not Another Cooking Show is awesome for amazing pasta dishes, a couple of which I've made and thoroughly enjoyed.

I subscribe to adam ragusia. I don't think he fits what you're describing at all. He just does cooking videos for things pretty much anyone could replicate at home and some educational videos centered around food. Kind of reminds me of Alton Brown's good eats.

Weisman does his "but better" videos. But he's does shit like fast food or takeout. He's not doing "improved" versions of fine dining dishes from the best of the best restaurants. Him and a bunch of other youtubers do the "flex" ingredient thing. But you could easily substitute or leave out almost all of those ingredients entirely.

idk how much of it is just a youtube persona, but yeah, he's insufferable lately. Wasn't always, but you can see how much he's changed over time.

Babish, I think the only cooking youtuber more popular than Weissman, recently did a tour of his house and studio for Architectural Digest. At the end he stopped to say that he was excited to show his home because it was a direct result of his viewers support, and wanted to show how much their support has lifted him up and thanked them for letting him achieve his dream life. The gap in character between the two is incredibly palpable.

This, I've watched videos from the channels he listed and yeah I don't think a single one of them made a comment about being better than a Michelin Starred restaurant. Maybe in a single video (out of hundreds) probably made a comment like that, but it was probably something out of jest.

I used to watch Cooking with The Blues.
I began to notice the videos being listed at greater intervals.
At some point, I looked into it, and as turns out the host has passed away.

It was clear he was that healthy but always seemed to be a genuinely good guy.
