Used to work at a Wendy's, and sometimes old people would come in and have us drop a new batch of fries so we can not salt them. Always guessed it was medical reasons.

this is untrue. ive worked restaurants for over 12 years. "flash frying" is a real thing
also salt doesnt dissolve in oil....

I've worked for about 8 years at 2 different McDonald's, one corporate, and one franchise. Both told me that was policy. I don't know, maybe Hawaii restaurants have a different policy, but we weren't allowed to contaminate the oil. Or at the very least we weren't supposed to. There sure as hell were times that we did do that, because the corporate one was the busiest one in the state.

Also, I don't know what salt not dissolving in oil has to do with anything.

So then it's not untrue. But like I said, I also worked for a franchise. Although you don't think that the people who clean the vats of oil appreciate having excess salt in there? That's most likely the reason that we were told not to do that.

salt does not dissolve in oil
potatoes need to be fried at two different temperatures, hours apart, for optimum crisp and flavor
potatoes can be held for up to 2 days after the first low temp fry
after the second high temp fry they can be held for an hour or 2 and quickly re-dunked in the fryer to sell

Okay, ummm...That has absolutely nothing to do with restaurant policy. But anyway, let's recap:

This began with Greg saying that a lot of the time fresh fries were just redunked. I said they can't do that. You said that was untrue and cited experience. I said it was true, and also cited experience. You said it's because I worked for corporate (ignoring the franchise experience for some reason), so it doesn't count.

And here we are. The fact of the matter is that employees at both restaurants I worked at were specifically told not to redunk fries. We had to get paper towels and wipe down the bin and the scooper. They might've let you redunk fries where you worked, but in the restaurants I worked, we were expressly prohibited from doing so.

Admittedly I should've said that at the restaurants I worked at we weren't allowed to do that, but by the same token you shouldn't have just said untrue, as it wasn't untrue in response to my post.

I came here to post this same thing. I've heard from friends who uses to work in Fast Food joints that this was the best way to ensure fresh fries. Then you just use the salt packets to season to taste.

Tbh most of the time people ask for no salt because they think that means we will drop them fresh for them.

My favorite thing is when they asked for no salt and got up to the window and ask for packets of salt. Every single time I would tell my headset operator to say "sorry we are all out!". Then when they asked for a portion cup full of salt from the fryer "sorry, cant do that".

Yeah, there was actually a term for this in some of the fast food places I worked. "Blanch the fries"

Used to do all sorts of shit to keep the timer down, like deep frying hot dogs at Hardee's, throwing old fries back in the fryer so they appeared fresh, dipped old beef patties in hot water, then throwing them back on the grill just for a second.

The things they used to have you do at fast food are disgusting. I worked at so many of these places back when I was 16 to 19 or so. Its why I dont eat at them at all.

The condiment tube of consideration dried out ages ago as far as fast food was concerned. One too many demanding ungrateful drive through shoppers will do that. The icing bag of consideration seems to stay rather full though.

Now I don't recall ever recooking fries where I worked. Or doing any unfortunate shortcuts

As for saltless fries: yes there I definitely some that seem to care about excessive salt intake, we regularly had people ask for no salt patties where I worked, but I'd put money that the vast majority is people wanting sneaky fresh fries.
