I don't know, maybe Hawaii restaurants have a different policy, but we weren't allowed to contaminate the oil. Or at the very least we weren't supposed to. There sure as hell were times that we did do that, because the corporate one was the busiest one in the state.
its cause you worked for corporate, their rules are nonsense...anyone who understands food and cooking knows that this is a totally legitimate practice, given its within the food temperature safe zones.
