Especially in this day and age where there's such easy access to so many spices-- most american foods are just terribly bland or not very tasty, unless they're grossly unhealthy (fried, full of unhealthy fats, etc.)

That's a pretty complex question. A region's cuisine is based on a huge range of factors, especially for a region as large and diverse as America.

Plus Americans heavily use salt and sugar for seasoning. Many people who visit complain not of blandness, but how sweet everything is.

Spicyness is generally more prevalent in foods from hotter climates. The closer to the Equator you get, the hotter the food tends to be. It's a function both of how human digestion works, as well as which plants grow where (ie, what each culture would have had access to in a world before global trade was a thing).

It's not entirely surprising that a culture and ethnicity rooted in some of the most northern climes is going to prefer blander food as a whole. Which still isn't a universal trait (regardless of things like the joke about how all white people love mayonnaise and hate hot sauce in Undercover Brother), but it is an understandable trend.

That being said, if you feel the need to slather every meal you eat in either tons of spices or lots of condiments, then either your taste buds are broken or you're trying to cover up the taste of terrible food - neither of which is something to be proud of.

I would wager that most folk think the UK has the most bland food in the world. Even more so England. I of course disagree but I'm biased so.

Everyone thinks their ethnic food growing up is so f****ing delicious that they've deceived entire generations to seek out "authentic cuisine." And then you eat it and it tastes like s*** and you realize their family only made that slop because they were poor growing up and they couldn't get their hands on real food.

Once you stop putting spices in food you start to realize how good it actually is.

Spices are just a way that was used to cover up rotting, spoiled food by making them taste better. Now that we have proper refrigeration it is not needed anymore.

To PO's point, that is why northern climates don't have as many spices, they can just stick a steak in a snowbank to keep it from spoiling.

Also - "American food" is such a broad spectrum, and not at all what others might consider it. I laughed my ass off when I was in Europe and the "American" entree was Prawns. I didn't even know WTF they were at the time.
