I like lots of banana peppers and olives on mine, but I don't just lead off with that. I'll order, then ask for salt, pepper, whatever...and then "just a little lettuce." See if they're listening, right. Then comes "lots of olives, lots of banana peppers." if they're giving you the regular amount of all of those, I think you're allowed to say "more olives please" or whatever you want. They heard you every step of the way.

It's a game of emphasis and timing.

It's not like you're asking for extra meat or cheese anyway. You get access to all of these ingredients with every sandwich and nobody I know uses every single one on the same sandwich anyway, so they really shouldn't argue over any requests for extra veggies -- you're commissioning the sandwich art!

They're supposed to be stingy. There's an "Extra Fixins" button for when customers demand more than, say, 2.5 times the regular amount of a given vegetable. And the regular amount of black olives is three to a six-inch. It's absurd, and I'm always happy when employees (and hopefully their managers/store owners, by extension) don't give a heck and go off the books.

The only times I've ever actually seen a person look like they were counting or "measuring" a veggie is with avocado (which is an extra charge anyway) and with tomatoes (because the slices are big and it's probably easiest to just count 3 for each six-inch).

I kinda do want to see some poor kid count off three olives just for the story.

Oh hey a Subway topic.

I've legitimately considered making a Top ___ Worst Things Subway Customers Do ranking to deal with frustration from that job.

as for this:

The default rule is 3 jalapenos and olives per 6 inch. New employees will probably do exactly that. Older employees will give extra olives by default (because who the fuck wants 3 olives) but hold off on jalapenos.

You have to realize, about 80% of Subway customers are fucking morons who, even if they ask for jalapenos, will throw a tantrum if there are too much. And it's a LOT easier to add more on when asked than it is to put on too much for someone and then either backing down or remaking the whole sandwich, depending on just how bad the customer is.

I've legitimately had a woman request I change my gloves because I touched salami. Not because she had an aversion to pork, but because my glove touching salami would somehow make her sandwich too spicy.

Actually, the rule of thumb for almost everything is "3 per six inch" except most meats, which are four:
3 Jalapenos
3 Olives
3 Pepperoni
3 Salami
3 Tomatoes (or less if we get monster-size tomatoes)
3 Cukes
3 Onion slivers (yep, really, but NOBODY is going to do that)

The other veggies have specific weight-based measurements you're supposed to go by but lol fuck that

People who have worked in food know that most people think they can handle spicy things even when they actually can't. Jalapenos aren't spicy, but you'd be surprised how often people are like "Make this extra spicy!" then send the food back for being spicy. So food workers usually are hesitant because they assume you are probably an idiot.
