They didnt use their model to make those predictions. They had centuries of data on when eclipses occurred and noticed the time interval pattern. Its the same with comets, we observed the repeating pattern and used that to guess the orbit. With Earth/Sun/Moon you can build accurate predictions using Earth as center but everything gets wonky when you try to add in the other planets. [after some reading] I found an article in Britannica https://www.britannica.com/science/eclipse/The-frequency-of-solar-and-lunar-eclipses "Because of the extra one-third day (and thus an additional eight hours of Earths rotation) in the saros, the eclipse recurs each time approximately 120 farther west on the surface of Earth. After three saroses, or 54 years and about a month, the longitude is repeated." To be accurate the priest would still need to use the plane of the moon's rotation around the earth and the plane of the earth 's rotation around the sun.
