The Jews just adapted it to their current belief system.

It's not even unique to the Near East. The Mayan Empire maintained they were the true people and the first humans who inherited the Earth. However, the Olmecs predated them by 1000 years and their ruins were all over the place - evidence that the Mayan were indeed not the first. So the Mayans said the Olmec were a failed creation of the gods who were destroyed and then replaced with humans (ie the Mayans).
