I've got a choice beef roast I'm cooking. I'm terrible with beef, so i started to marinade it yesterday so that it at least comes out tender tomorrow.

Me too and I only eat it during the holidays so I'm really excited.

I've got my bread dough doing first proof. I hope it comes out well I've never made my own buns before except the ones I grew on my body HEHE anyways I also have the dessert cake baking now so it'll be nice and cool tonight for me to frost it

What is the interior for the peppermint pattie? Peppermint and some type of powder sugar frosting?

I did that for a gift last year. They were pretty fantastic, and as you said, stupidly easy to make (just condensed milk, icing sugar, and peppermint extract, then dipped in melted chocolate mixed with butter so I could skip tempering). I've been saying for years that I want to try making my own girl guide thin mints (a patty recipe like that, a basic chocolate wafer, then dipped in chocolate with a bit of peppermint extract added), but I've never actually gotten around to doing so and last year was my first time trying to make the patties.

I'd go for something crunchy. A soft cookie could also work, but if I went that route I'd probably just make sandwiches instead of dipping them, and might go for a double chocolate cookie. I've got a chewy double chocolate cookie recipe that I like using for sandwiches, particularly with homemade marshmallow fluff (which is just an Italian meringue). The phrase "double chocolate marshmallow sandwich cookies" tends to get people pretty excited >.>

This is the recipe:

3/4 cup sweetened condensed milk
3 1/2 cups powdered sugar
1 1/2 tsp peppermint extract

Knead that into a firm dough, shouldn't be sticky. Roll 1 inch balls to make patties on top of some wax paper. Let the patties dry an hour, turn them and dry them another hour. Melt some chocolate and dip them then stick them in the fridge to firm up. You can do a second coat of chocolate but I didn't need to.

Wicked easy.

I've never made prime rib w/ horseradish sauce I need to try that some day. Bet your house smells amazing today

yeah if you like chocolate that sounds really good. i'm not a huge chocolate dessert person in general but i've been trying to be more open minded. a lot of chocolate flavors mixed together to me is sometimes a bit much.

yeah shortening in something uncooked would be a no go for me. shortening has a good flavor if you're literally making shortening cookies and baking them but that's about it. when i was little i snuck a spoonful of crisco once because i was really curious how it tasted. it was an interesting experience lol

Alternatively, you can skip adding fat to the chocolate, but then you either have to temper it (which is quite a bit of extra work) or it'll start blooming (getting those light patches you sometimes see on chocolate) in a couple days. Neither are particularly attractive compared to adding a couple teaspoons of a fat, so here we are.

my dough definitely did not have enough flour so i remade it. now i'm afraid i put too much flour. but that's part of learning how to bake! i made a goal when i was able to move back into my house to learn to bake and cook more foods so this is part of honoring that.

If you can find recipes that use weight measures instead of volume (and you have a scale), I might suggest trying to learn with those. Depending on how hard you scoop, a cup of flour can weigh anywhere from 4 to 6 ounces, which is a huge variance that is easily enough to screw up whatever you're making if you don't account for it. There's still always going to be some intuition involved in bread making because the current temperature and humidity will affect how much flour you need, but if you can at least be certain that you've put in the amount the recipe called for, that makes adjusting easier.

Also, it will often seem like your dough is too sticky when you start kneading, but resist the urge to dump a bunch of extra flour in to fix that. As you develop the gluten, it'll become less sticky, so you only need to add the bare minimum to actually be able to work with the dough. A common beginner mistake is to underestimate how much kneading will bring the dough together, so watch out for that.

To be honest I was disappointed with the recipe. The way it baked was not ideal. One complaint in the reviews has to do with how wet the batter is because of the puree. I tried to cook down my apple cider more than 1/2 way like the recipe called for. But it was still too wet so the outside cooked super hard and the inside took forever and is very dense. The flavor of the cake in the middle was very good so I'd love to try to make this again when I've learned more about baking so I can try to get it the bake better.

I'm terrible at cooking. I just tend to wing everything. Plus for me personally I REALLY like everything to be over spiced so I could really only ever cook for myself.
