Also you should dry it immediately after washing. Japanese knives can rust if you dont dry them.

And only use them on wood cutting boards.

Once I moved out of my parents I bought my set of Henckels. I spent $200 CAD which was a lot of money for 24 year old me and a lot of money back then. Its been 13 years and they still work great. Its worth the investment.

the question is more the kind of stainless steel used, but generally fine idea to dry them.

Japan restaurants actively use plastic/rubber boards so that's not a strict requirement.

Anyone here ever make their own sushi? Any tips or suggestions on equipment to get? Been looking at some basic rolling sets on Amazon but no clue where to start

I make rolls weekly. I dont use a fancy sushi mat (think I paid $5 for it a few years back). Best trick I learned is to put Saran Wrap on the mat to make rolling easier (since the rice wont get caught up in the mat).

To be honest the hardest thing is to get the rice right. Only short grain. I really like Japanese imported but its getting super pricey at the Japanese grocery store so I have been using some grown in CA.

if you really are serious get a Japanese rice cooker made in Japan (like a Zojirushi, but some of the cheaper ones are made in China) with the fuzzy logic so you never have bad rice.

who puts their kitchen knives in the dishwasher? i always just handwash mine. i use my chopper all the time. was just part of a cheap set but i've had it 4-5 years and it's still great. has dulled out so i was sharpening it with whetstones but did just buy this knife sharpener thing i'm waiting to get. one that uses a rod instead.

i have definitely thought about getting a nice japanese chopper.
