14.8 lb turkey, says it should take 3 days, maybe 4 (some sources said 1 day per 4 lbs, others 1 per 5 lbs)

I put it in the fridge early Saturday evening, a day earlier than I'm "supposed" to, and the freaking inside is still frozen solid. :(

I gave up trying to get the damn neck out after like half an hour (including soaking it in cool water for 15 minutes), just gonna let it cook for an hour then try again, maybe....

At least the giblet bag was right at the edge of the neck hole, so it came out without much effort.

Instead of soaking it in cool water you should try running cool water inside. For several minutes. The cold of the still frozen turkey reduces the temperature of the standing water that you are soaking it in. The running water constantly replaces that with fresh, warmer water, directly into to frozen cavity you are trying to thaw, warming the frozen part of the Turkey much faster than just soaking it.

The temperature settings of your freezer and refrigerator could be lower than average or recommended. That could be why your shit was still so frozen.

Definitely giving it another day to thaw next time...

It came out fine, only the inner cavity was still partly frozen.

Also, you totally can cook a still frozen turkey. The important part is minimizing the time between > 40 degrees and less than 140 degrees.

I usually put in the lower part of the fridge on Mon week of TG then I set it out on my countertop on Weds until I'm ready to cook it TG day.

I see what you're getting at, but even in context, it's still awkward wording. Even using a period instead of a comma would have clarified it. This way, it looks like the latter half of the sentence applies a condition to the first half (it was fine, except that the inner cavity was frozen), when in reality they are two separate ideas.

You may want to check the temp in the refrigerator to avoid that happening next time. It sounds like it is set very close to freezing if it isn't letting your turkey thaw. It should be between 35 and 38.
