Because of Skyward Sword's motion controls and the simple fact that most people are righties. BotW doesn't push for much motion control except some here and there

They just made him a lefty in OoT for some reason.

He was always supposed to be left-handed, but then they retconned him into being ambidextrous when they had to swap the stance around for the Wii motion controls in Twilight Princess. He winds up being right-handed in Skyward Sword and BotW for more or less the same reason.

According to the original game, if Link is facing to our right, he strikes with his right. If Link is facing our left, he strikes with his left.

As such, he's ambidextrous, as any master swordsman would be.

Yes, he is good enough to swap sword and shield hands.

I have no idea if it's a real thing, but films like Princess Bride have popularised the concept.

90% of the time, someone who's ambidextrous is just someone who was born left-handed, and who was forced to use their right hand as a child, so they sort of became equally proficient with both.

We live in a right-handed world, so there's always more motivation for left-handers to adapt than the reverse.

I didn't realize that this wasn't common knowledge.

Growing up in a family with a lot of doctors and nurses, I've watched numerous clips and heard a lot of anecdotes of people losing the use of their dominant hand through an accident or other medical issues, and learned to use their other hand through practice.

I always thought that anyone can become ambidextrous if they practiced enough.

Never bothered to learn it myself though.

In the ALttP player's guide they made a story reason for the hand switch: in Hyrule there's a superstition where you always have your shield facing Death Mountain.

I think I assumed that one's off-hand was permanently inferior. maybe you could train it to be better than it is now (it's recommended to do 10% more reps on your weak side for example), but it will always be your off-hand and never really work properly compared to your main hand.

from the sound of it, no, either hand can do anything you train it to do. there's just a tendency to default to training your right hand up first, and your dominant hand will tend to always be better, but only because it will tend to get more practice automatically, even if you train your off-hand too.
