What would happen was the hamburgers that were a bit too overcooked to be served on a bun would be moved to a warming drawer, and then later cut up for a pot of chili. I think sometimes they were even moved to a cooler. Not really that big of a deal since they get cooked in the chili again, so the meat is soft and not a health risk. And how does the fact of where it comes from change the flavor? If you liked the taste before, it's the same taste now, nothing has changed about it, so you will still like it. Tons of dishes we eat today were created for that very same reason. Just look at french toast. It was literally created as a way to make stale bread edible again instead of being thrown away. That's why anybody who's even remotely decent at making french toast will leave the bread out overnight to let it go a little stale for the morning.
