Luckily Lock On tecnhnology is fully implemented on the Virtual Console and XBLA releases.

if you can stomach the touch controls, the IOS version of Sonic 2 is by far the best way to play that game. Extra levels, full widescreen support and a way smoother special stage

For 1, 2, and CD, the iOS versions are legitimately great and the games controls are simple enough to work on touchscreen

But hey I'm obviously not saying "don't play the first 3", they're all good to great games. But I feel like you could play Mania and almost get the definitive Sonic experience in one game.

Best solution is obviously play 1-3+K, CD, and then Mania. I was more suggesting a time-saving thing

Steam, for all the ROMhacks in the Workshop. I particularly recommend playing the classics as Amy, once you've gone through them with the normal characters first, of course.

the Sonic Ultimate collections are on sale all the time for dirt cheap, either on Steam or Humble Bundle; that's definitely the way to get them

Xbox arcade versions are pretty good. You can play Sonic 3 and Sonic & Knuckles separately or together and you can even play Sonic 2 & Knuckles as well as a few other extras.

The iOS versions of Sonic 1 and 2 are technically remakes though. They're great, but if you want something more akin to the 'original' experience, then go for one of the other versions.
