Lobsters and other crustaceans become very dangerous to eat rapidly from the second they die. If someone kills a lobster before boiling it do not eat it as it could be dangerous.

I watched a video on how to actually eat lobster and it's definitely not like eating chicken that's for sure. May be easy to cook but definitely not easy to eat.
It's like I'm in Biology class.

Killing the lobster before cooking it is not only more humane, but cooking a live lobster makes the meat tougher. But you must dispatch the lobster just before cooking. The longer you wait the greater the risk of food poisoning.

Place the tip of a sharp chef's knife behind the lobster's eyes, right below where the claws meet the body and halfway to the first joint. Swiftly plunge the knife down through the head. The legs will continue to move a bit afterward but the lobster is in fact dead.

An alternative is to place the lobster in a freezer for 30-60 minutes. It won't freeze, but it will induce a state of torpor so it will be unconscious when you drop it into the boiling water.

A combination of these methods can be used if you're still squeamish.

There are electric stunning devices for lobsters, but they are much too expensive for consumers.

Some are red naturally. It just depends on the lobster. They can be many different colors.

I'm an inspector for the USDA and if people saw the way slaughterhouses operated (let alone the "quality" of some of the livestock harvested for food) there would be a hell of a lot more vegetarians. I'll still eat veal if it's in a situation to be polite, but it's one meat I dont buy anymore. And if the other meat isnt from somewhere like JBS, Tyson, or Perdue I'll generally avoid purchasing it.

You have to kill it and freeze it pretty quickly. I think they say it has to be less then 24 hours. So for areas where lobster isn't native, it is usually easier to sell and cook lobster live if you want "never frozen" lobster.

It might just be me, but I have never known anyone to cook/eat a whole lobster outside of a restaurant setting. Most of their edible meat is just in the tail and claws anyways, so might as well just get a frozen tail.
