Normal Dutch cheese, which I suppose is mainly referred to as "Gouda" in the US.

English cheddar is like that yes. But that creamy plastic quality is what makes it very good for melting. It's a crime not to have it on this list. I prefer NZ or Australian cheddar though which is more dry and sharp. It doesn't melt as good but taste better.

Tell that to all the people that voted American. That and cheddar are the 2 cheeses that should have been on this list first, because they have the best melting qualities.

PS. One of the best videos I watched on YouTube in the last weeks was with this cheese expert going through a wide selection and how to deal with them. A must watch for any cheese lover. It's an incredibly cheesy video.

You mean cheddar or American. Both melt good but American melts the best, probably of any non soft cheese. I mean that's it's biggest (only) selling point because it has a bad rap.

Ive never done so on its own but sometimes Ill sprinkle a few crumbles of gorgonzola along with other cheeses like Swiss or muenster and it turns out pretty good

American has a bad rap because legally it doesn't even qualify as cheese. If you really need something that melts you should just use a soft cheese that actually tastes decent.

Honestly, unless you're working with the equivalent of a super aged parmesan, or a cheese that specifically is designed to not melt like halloumi, you can get pretty much any cheese to melt if you're careful how you do a grilled cheese.

Make no mistake, I don't like American cheese lol. I was just pointing out it's one asset. And the cheddar squad continues to dominate. I mentioned NZ/Aus cheddar earlier but my favourite is actually US aged cheddar. It's a lot more expensive though so I don't have it very often. It's very similar to Red Leicester in appearance though I never had Red so I can't compare the taste.

show me the law that specifies American cheese is not a cheese

its ok to not like it, but to claim it isnt cheese just because its processed and only shortly aged is just dumb
