Normal Dutch cheese, which I suppose is mainly referred to as "Gouda" in the US.

It's a crime not to have it on this list. I prefer NZ or Australian cheddar though which is more dry and sharp. Honestly, unless you're working with the equivalent of a super aged parmesan, or a cheese that specifically is designed to not melt like halloumi, you can get pretty much any cheese to melt if you're careful how you do a grilled cheese. ... Make no mistake, I don't like American cheese lol. I was just pointing out it's one asset. And the cheddar squad continues to dominate. I mentioned NZ/Aus cheddar earlier but my favourite is actually US aged cheddar. It's a lot more expensive though so I don't have it very often.
