If someone damages your property, and refuse to reimburse or replace, sure, you probably should sue them for damages. That's the entire point of being able to sue in the first place.

The country club claims the waiter is responsible. Sure, he may have done it. But he was their employee and performing duties for them. The country club should pay up, then follow up with a lawsuit against the waiter if they feel that they can prove he was somehow negligent and it wasn't just a simple accident.

The club should generally be liable for damages caused by their negligence, but I can't help but feel this goes beyond reasonable limits on that. The only reason $30,000 in damages was possible here is because she chose to bring her overpriced trinket along, and expecting the country club to bear the full consequences of that decision seems unreasonable. But then anyone who would spend $30,000 on a purse probably isn't very good at reasonable decision making, so...

You don't just walk into a store and buy them They have to be ordered and may even require you to purchase a certain amount before you can place an order. They are also limited so once it's out you can't just get a new one.
