They do what they think looks cool, pretty much. The most practical way to use a weapon like that would be to use it like a fencer, but that doesn't look cool.

Saying that it shouldn't matter because they should be fencing anyway doesn't change the fact that holding a light saber towards you is stupid, dangerous and limiting.

It at least had world building and introduced some cool things into Star Wars. Got a cool pod racing video game from it, droid army, double bladed light sabers, Qui Gon, who was probably the least cringe jedi in all of Star Wars.
