Basically, if you want to get good attribute bonuses upon leveling up, it's a good - if counterintuitive - idea to not completely fill your Major Skills with skills you plan on using heavily. In order to get a +5 bonus in Strength, for instance, you'll need to gain a total of ten skills levels in Blade, Blunt, and / or Hand to Hand (any combination will do) during that player level.

Bearing that in mind, here's where the problem lies: if you fill your Major skills with skills you're going to be using frequently, then you'll probably be leveling up your character too fast, and not getting enough total skill increases to get good attribute bonuses when leveling up your character. However, if you fill your Major skills with skills you either never use or just plain don't like using, leveling up (and by extension game progression as a whole) will be an absolute chore. So it's a good idea to strike a balance. It's wise to choose Major Skills that you can 'control' easier in terms of when and how fast they grow. Athletics, for instance, is a terrible major skill imo, because you gain levels simply by walking, and it's very unpredictable and hard to control if you're trying to hold off gaining a player level until you've gotten enough skill levels to get good bonuses.

I'd recommend putting your primary melee skill - in this case Blunt - as a minor skill, that way you can swing it around as much as you like without worrying about leveling too fast. Make Blade or Hand-to-Hand your Major melee skill instead, and you can grind that out during the lategame if you want max levels. I would also move Heavy Armor to a minor skill, because like Athletics it's hard to control, since you gain skill levels simply by being hit. I would instead recommend Armorer as an Endurance-based Major Skill; it will level as a fast as you want it via Repair Hammers, but gives you the freedom to put a freeze on self-repairs if you want to hold off leveling. The magic skills you picked are good, I would leave those as Majors.

TL;DR so here's my personal recommendation for Major Skills:

Alchemy
Block
Blade / H2H
Conjuration
Armorer
Illusion
Acrobatics (looks like you missed a 7th skill, I put this one in so you'd have a Speed-based Attribute that's fairly easy to control / grind)

And if all of this is too overwhelming, honestly, don't worry too much about it. You can still get through the game and enjoy yourself by just picking the best +3, +4, and occasional +5's that you end up with by playing the game naturally.

I would highly recommend prioritizing Endurance gains as soon as possible, though. END determines your Health gains when leveling up, so the sooner you can get high / max END, the more total Health you'll have for the rest of the game.

My favorite build is crackhead skooma fist-fighting castle climber, jump and don't touch the ground for 5 screens. Feather 100, Speed 100, Athletics 100 for 1 second and slam down the skoomas, you're FLYING.

I especially like the NPC dialogue when my Intelligence is zero. They start acting repulsed by your freakish lack of any intellect. They start brazenly insulting you, it's pretty classic shit.
