Cyberpunk 2077 actually does a good job of establishing their characters' sexuality and romance trees. Judy Alvarez works for this topic because in dialogue she clears states her preference. If you pick male V, you can't romance her. Vice versa with Panam. I think some of the romance options work with either male or female V, but those two for sure are set.

Sera from Dragon Age Inquisition is the same. Male characters can't romance her.

Also Leliana is canonically bisexual. Regardless of the Warden's gender Leliana is confirmed to have been in a relationship with a woman before getting with them.

The same goes with characters that the creators have actively said that they aren't lesbian/bi, but that's just the way the cookie crumbles.

They're more referring to the "player-sexual" characters (such as Liara) who overtly have no actual lesbian/bisexual-ness beyond "the player is always available."
