It depends on the restaurant's system. It's easier to hide cash tips depending on the place, however most systems automatically assume you got a certain cash % based off cash sales. In TX they expect you to get 12% and if it's less than that you need a manger swipe. Someone always trying to claim 5% or whatever is going to be denied and treated suspiciously. If you make way more cash tips than what was expected then yeah it's not that hard, however in my experience it's rarely that big of a deal. Like, maybe hiding $8-16 from the government on average. The person who gave the tip announced to the entire restaurant that they were only giving it to the poster. b) What he did was wrong in most cases -- refusing to put the tip back in the 'communal jar' is a fire-able offense in almost all restaurants. The idea is that everyone else has been splitting their tips to him for the entire time. So there might be days where the same could've happened to him, but he received the benefit of said tips without deserving it.
