Mario Wonder
Mario Maker 2
Bowsers Fury (including 3D World which is a great Mario)

I own 3 houses and Xenoblade 3 but havent gotten into either yet (will fix that soon though) Arceus, Splatoon 2 and Xenoblade 2 didnt click with me at all. I have not tried LM3 or Kirby but could get around to it. I think most of the multiplats I am comfortable getting on other platforms.

Anything I am missing or someone willing to advocate on a game?

Breath of the Wild, Super Mario Odyssey, Smash Ultimate and Mario Kart 8 are the only games I would consider a "must", and even the latter two require you have an interest in their specific genre.

for "must have" it's mainly gonna just be Smash and Mario Kart for multiplayer, then Zelda (TotK and BotW) and Mario (Odyssey, Wonder) for single player. after that you can play with other series and Wii U ports.

Like Metroid, you've got Dread and Prime. like platforming, Donkey Kong Tropical Freeze, Mario 3D World/Bowser's Fury. want cute, Yoshi's Crafted World and multiple Kirby games. want strategy, Pikmin Collection, Pikmin 4, and Advance Wars 1/2 remake. want RPGs, Fire Emblem Three Houses, Xenoblades (start with the remake of the 1st), SMT5, and for more obscure stuff there's 13 Sentinels too. and if you want action games technically there's Astral Chain and Bayonetta 3 but uh... well, performance issues exist. which is a general problem for all the games in that they run better emulated than on hardware and may well run better on the Switch 2 when it's out. nothing in this section is a "must have" i'd say but if you like a certain genre it stands out the most. hell, if you want more Zelda or more Mario you've those options too with Captain Toad or Zelda remakes/ports.

Is there anything that's a "must have" that isn't by Nintendo? Because so far my plan has been to just not have a Switch. It (more or less) worked for Gamecube, Wii, and Wii U, but it sure does suck being cut off from one of the biggest developers in the world.

technically if you're into SMT then SMT5 is good.
but it'll eventually get a PC release one day. probably with Denuvo though, for what it's worth. and that one is a game that's way better on PC emulated over the actual Switch console because performance issues exist on it. the recent DQM game is pretty good too but you've gotta like the genre and same deal with performance and probable PC release one day (and additional aspect of DLC that should've always been with the game).

Nintendo is by and large for Nintendo.

If you guys are gonna bring up emulating games, then nothing is "must own" might as well only emulate and save a bunch of money.

All 3rd party indie games are best on Switch, because of the portability option. You won't think you'll use it, but then you do.

Mario & Rabbids is exclusive to Switch, right? Not sure Id classify them as must play but theyre decent enough.

Witch on the Holy Night

Mario Odyssey and Zelda BOTW+TOTK. If you like RPGs, Xenoblade and Fire Emblem 3 Houses.
