So yeah, a week ago or so I had a sudden urge for corn bread which I have not had in years.

I go to the store planning on getting some, and the smallest thing of cornbread they have in the bakery department (at safeway) was freaking 6.99. I was like woah, no way I'm paying that much, so I didn't get corn bread.

But I still wanted it.

Now it's a week later and I'm thinking of going shopping on Thursday.

I had a eureka moment though and realized, you can buy those boxes of cornbread you make yourself!! I looked it up and a box of cornbread is 1 and change!! That'll make just as much as the $7 cornbread in the bakery, and I could even in theory make 2 batches so it stays fresh (Cause I can't eat THAT much cornbread all at once even if I really like it).

I even have a nice cast iron skillet to make the corn bread in!!

So on thursday I shall return to the store and triumphantly leave with some corn bread mix to make!!

This is very important information and I felt it was imperative that I share it with the gamefaqs PoTD community.

I don't even know what the ingrediants are, but ...I would imagine corn is one of them? I don't have corn, hmm let me look it up. I have flour/eggs/yeast/milk/oil I could make normal bread....but I don't think I have the corn portion of that....or even like um...canned corn etc (no corn at all, unless you count popcorn lols.

Still I will look it up, it would be amazing if I could make some tonight.

Yeah and it used to be pretty cheap.

Safeway used to have 1 slice of it for about $2 and a full block (9 slices?) for $5. This was admittingly over 3 years ago.

Now they didn't have the 1 slice at all, and the full block (like brownies but cornbread) was $7 which seems insane to me. Mind you the brownies are that much as well (but too much sugar even if I love em).

I'm not paying $7 for corn bread, that is insane. But I can buy a box of jiffy corn bread for $1.19 and make my own at home. Also I always had a hard time eating all that corn bread before it would get hard etc (I would generally eat a slice a night, and it doesn't last 9 freaking nights).

If I buy a package and it makes the same 9 pieces, I can hopefully make half (4 pieces), eat them over 2-3 days and then make the other half another time. No more wasted corn bread and waaaaaaaaaay cheaper.

But I gotta wait till Thursday to go shopping, I still have chicken legs (were on sale 77cents a pound and tri tip steaks (not on sale,normal price of 10$ a pound) to bbq tomorrow.

Half pound of steak and about 6 legs is gonna be my main meal tomorrow (had the other half today already).

Then thursday I go into town and go shopping, but first I go to this not very good chinese place for lunch, the food isn't great but the soup on thursday is yum (beef wonton soup), so it's worth it. I just get spicy teriyaki beef with white rice and it's pretty decent, very filling and the soup alone is worth the price.

I was considering getting a muffin tin when I go shopping after reading recipies etc so I could have a bunch of mini-muffins to snack on instead of one big thing. The only reason I wouldn't is cause my cast iron skillet might make the corn bread even tastier. Still it would let me make less corn bread at a time, so I'm gonna get a mini muffin pan thing when I go if I remember. Then I can literally just make as much corn bread as I want in 1 sitting and it'll always be super warm and massively delicious that way!!!

Can't wait.

Wish I had a time machine.

Can't give away extra though I live out in themiddle of nowhere, I guess I could go down to the beach and feed it to the seagulls, but i'd rather just make a smaller batch that I can finish in a day or two.

you can freeze cornbread, just look up how to store it properly.

it keeps for about 3-5 months.

The recipe I usually use for cornmeal muffins is cornmeal, milk, flour, sugar, baking powder, salt, egg, and oil. Another one that I make in a 9*9 pan calls for most of the same stuff, but adds honey and uses heavy cream instead of milk (I make it less often because I don't usually have cream on hand). No yeast, cornbread is chemically leavened.

Odds are the mix you bought is just flour, sugar, cornmeal, salt, and baking powder. Maybe milk powder and dried egg if it just calls for adding water.

I've had it that way, and I know some people swear by it, but I'm largely ambivalent about it. I certainly won't turn down corny bread, but I don't care enough to bother putting it into any I'm making.

Most people do not keep cornmeal in their pantry. Flour is far more common.

these ingredients have different purposes so I'm not sure why flour is even brought up, you can have both flour and cornmeal in your pantry

God I wish, no i'm still out on steamboat island 30 mins away from civilization, or I would just have popped out for some. I almost went out today but I have an appointment friday morning, and now it's raining tomorrow, so I can't go out tomorrow anymore. I'll just go get everything on friday.

Having my brakes checked on friday, and if they are ok, and just something making them grind etc, i'll replace my two front tires at that same place. Then I just need to find somewhere to replace my rear window (broken by a tree), hopefully for less than $400, and I'll be set to drive again like normal.

Until then I can't drive when it rains sadly, which means no cornbread tomorrow.

I really should go out today, I still could, but I'm lazy, and I still have food to eat here, which makes shopping silly right now.
