yup. One of my best friends is vegan so have tried a lot of new things because of that! Shizen sushi in San Francisco is amazing. I regularly cook tofu and tempeh or just have plant based meals in general. Cheaper too if you don't buy specialty stuff, and good for the environment (even considering transportion, still better than meat especially beef -- can look that up if anyone wants, there's a source, or you can Google it)

anyone who is looking to try tofu this is my favourite recipe (very indulgent with the butter -- and if you want plant based just use vegan butter, miyokos is my favourite but that can be expensive and since it's just a sauce probably doesn't matter too much)
https://www.epicurious.com/recipes/food/views/black-pepper-tofu-365129

lots of easy substitutes to do too in general. Plant based broths for beef or chicken. Just Mayo was great but they discontinued it T-T Beyond Burger is my go to now if I have the choice

I haven't tried any of the "plant-based alternatives" that are growing in popularity, but I eat plenty of veggies and will sometimes use tofu or chickpeas as the protein component of a dish. By and large, I eat substantially less meat than is typical in the American (or Canadian) diet, generally not having more than ~4 oz per dinner. I still enjoy meat and tend to think of meal planning in terms of building them around whatever meat is on sale, but most of my diet is plant-based (also known as plain old eating healthily, before "plant-based" became a marketing buzzword).

Soy ice cream is good. Oat, not so much. Almond Milk depends on the sweetness added. Tofu is good when completely strained and then allowed to cook in whatever sauce. IKEA's vegan meatballs are good, and I keep a couple bags in my freezer. Trader Joe's has a high-protein veggie burger I like. So yeah it depends, like with anything, really.

Same as above they are much better in bars, pubs and whatnot but these are easy to cook at home.

I actually kind of like the veggie burgers that aren't trying to be meat but are trying to be veggie burgers. I don't always want a "burger" made from beef, sometimes I want other stuff. Chicken, fish, pork, or even veggies. Variety

Like the chipotle black bean burger patties from Costco. Made with beans, corn, and peppers and they taste nothing like meat. But they do taste good!

Soy milk? Delicious. Almond milk? Vile.

Which brands and kinds are you comparing? In all my experience, mostly with the unflavored and unsweetened varieties, I have found Almond milk to have a very neutral flavor, like thicker water. Soy milk, while not "bad" to me, has always had a more noticeable flavor. I usually drink Silk brand. And if you haven't already, maybe try Simply Almond milk, the same people that make orange juice and stuff like that. My favorite kind.

As for plant-based alternatives, I have yet to find a good fake cheese or chicken, but I think Impossible/Beyond beef is just as good as the real thing, for most ground beef-like substitutions. If it weren't for the higher cost, I would order those options more often, but regular beef is usually cheaper.

interesting, I like oat milk the best. taste like cookies! I got used to skim milk before switching over so the thinness I actually prefer.

also the best for the environment

never liked almond milk, find it very bitter, not great for environment (though still better than cow milk)

Cashew milk is my next favourite, and can be low calorie, but social work concerns there

I also really suggest this one brand that's called like New Milk or something. it's a combo of soy, coconut, idk what else. tastes the closest to milk I've ever had

Interesting, soy milk tastes very bitter to me, while regular almond milk doesn't. I didn't like veggie burgers. I'll eat tofu in my Asian food and that's it. I tried a piece of tofurky one time because a friend worked really hard to make it and I didn't want to be rude. Ugh.

I'm just a picky eater in general though so.

tofu I think shines when it's just meant to be tofu, not trying to imitate other things

Though, at the same time, you really need to do something with tofu to make it palatable. Most meats, you can get away with just adding salt/pepper and cooking it, provided you use a suitable method for the piece you've got. Try that with tofu, and you don't get much of anything because it's such a neutral flavour on its own. The flip side of that is that it's extremely versatile and you can season it with just about anything, and that's pretty nifty, but it does mean that people that don't know how to prepare it will often end up not liking it and staying away from it.

In general, though, what you've said is my opinion on a lot of vegetarian/vegan imitations. Many of the imitations just end up trying too hard (often being pretty highly processed) and still don't end up being decent imitations. If I'm eating a vegetarian dish, I want to eat a dish that's not ashamed to be vegetarian and doesn't try to pretend to be something else.

I mean, there's a lot of plants I love to eat.

Corn, potatoes, beets (If they're cooked right), asparagus, I fucking love asparagus when it's cooked right.

If you're talking about meat substitutes, that's a different question. I have nothing against them, though I've never really tried them. I don't see a reason why.

I do eat vegetarian dinners every now and then. I'm trying to expand on that context, but it's always hard to actually cook for it.

My favorite is a potato cooked in a pressure cooker with curry sauce. Makes me want some right now. Also peas.

One time I bought a ton of silken tofu by mistake and had to figure out what to do with it. I mixed it with ground beef and seasonings to make tacos.

Silken tofu often comes in packages that don't require refrigeration and it's dirt cheap, but it's very soft and falls apart very easily, so it doesn't work for most recipes that call for tofu.
