Its going to be nice and 75 here

1. Fish tacos with honey chipotle salad. I will use my moms recipe which is lightly breaded sea bass. Soak it in lemon juice and a lot of cumin, sat, pepper, paprika a bit of cornstarch. Coat in flour and lightly fried. Goes with avocado crema and slaw and the salad on the side which has crispy shredded tortillas on top.
2. Short rib tagliatelle with a fresh summer salad of strawberries, arugula and micro greens. I stew the short ribs in a red wine tomato sauce and make a pasta sauce out of it. Top with parmesan
3. Chicken pita. Chicken marinated in garlic and Mediterranean spices, with a garlic sauce and hummus. Side of fattoush salad which is lettuce, mint, parsley, tomatoes, cucumbers with a sumac vinaigrette. Topped with crispy pita chips

Im leaning towards the first since its light and summery and pasta might be too heavy for lunch. Third is a fun option to go back to my roots which I dont do as often as I like. Curious to what others think.

3 also works for light and summery enough without being too heavy imo. I mostly want to make perv jokes about the first one but for real a lot of folks don't like fish, so I'm hesitant to serve it at get togethers. You know your girls better than I do though. Cater to their tastes.

I havent tried a cream reduction. I just do the french way of brazing it in the red wine reduction sauce. I feel like cream would make it even heavier. Heres a pic of the last time I made it

I feel that to be getting the most out of a short rib you should be using a relatively fatty cut of meat, and using a slower method. The cream sauce goes well with the fat as it cooks out and makes a delicious though admittedly rather decadent dish.

I thought of burgers too but I dont have a grill yet. Which also kind of messes with the chicken pitas because its best to bbq the chicken on skewers but I can get by with the oven at least

Short ribs. Making the sauce with the fond and braising the ribs in the sauce makes clean up easier. One pot baybay

Yeah I usually braise it in red wine and tomato sauce for a few hours until it falls off the bones. Shred the meat and then reduce the sauce. I like the option because its easy to do other things while its cooking but it seems a bit too heavy for a lunch.

And tell me about it. They say its too gamey but I tell them they just havent had good lamb.

Romaine lettuce, cilantro, tomatoes, avocados, red onions, roasted corn that I season with paprika, salt and pepper. I make the chipotle honey vinaigrette from scratch. Then I top with shredded tortilla strips.

Can I come over too?

Id be thrilled to eat any of those, but fish tacos sound best to me

Yes and I can make a big pitcher of white wine sangria too to keep with the theme. If I make the chicken pita then Id make lemon martinis but thats more work lol

Ahh crap one of them doesnt like seafood and I forgot. I suddenly remembered and asked her and she confirmed it. She is weird to me. Im thinking of pivoting to my sweet and spicy steak tacos instead which I had totally forgotten about lol. I just want to make something easy and tasty.

Or maybe Ill make both the steak and fish and set up a little taco station.

My husband is acting like its a big deal to take care of our daughter while I prepare stuff tonight, even though I asked the nanny to come by a few extra hours tomorrow morning. Hes giving me a ton of attitude and playing games while he leaves our girl to fuss and cry and I just cant deal with it right now. I guess he felt bad because he just took our daughter to Home Depot and wants to put up the patio lights tomorrow morning that Ive been asking about for weeks now. Im limiting the menu to just sweet and spicy tacos. No salad. Making lemon bars for dessert. Doing those now and the steak tomorrow while the nanny is here.
