- Fish tacos with honey chipotle salad. I will use my moms recipe which is lightly breaded sea bass. Soak it in lemon juice and a lot of cumin, sat, pepper, paprika a bit of cornstarch. Coat in flour and lightly fried. Goes with avocado crema and slaw and the salad on the side which has crispy shredded tortillas on top.
- Short rib tagliatelle with a fresh summer salad of strawberries, arugula and micro greens. I stew the short ribs in a red wine tomato sauce and make a pasta sauce out of it. Top with parmesan
- Chicken pita. Chicken marinated in garlic and Mediterranean spices, with a garlic sauce and hummus. Side of fattoush salad which is lettuce, mint, parsley, tomatoes, cucumbers with a sumac vinaigrette. Topped with crispy pita chips
Im leaning towards the first since its light and summery and pasta might be too heavy for lunch. Third is a fun option to go back to my roots which I dont do as often as I like. Curious to what others think.
