You weigh the container separately and then subtract the weight.

Fluid ounces are a measure of volume anyway not weight. A gallon of milk is the exact same size as a gallon of water but they weigh different.

Aluminium is 2.7

It does under certain conditions. Freeze or boil the water, put it under high pressure and that wont be true.

Well actually I did, water bottles measure by volume, not weight
4 water bottles of 2.25 litres each is 9 kgs plus some to account for the weight of the bag and the bottles themselves

The US system is technically called "US Customary Units" and while it and the Imperial system do share many units of measurement, there are significant differences here and there, especially when it comes to volume, which just compound as you use larger and larger measurements.

Like 1 US fl oz 1 UK fl oz just to start, and moving up from there something like a Pint or Gallon doesn't even contain the same number of its system's respective fl ozs (ex. 1 US Gallon is 128 US fl oz, 1 UK Gallon is 160 UK fl oz).

The point is, I was able to easily able to estimate weight when incomplete information was given

I don't need to know how many fluid ounces is in a water bottle to go. This is about 5lbs. I don't need to know how many inches are in a mile to go, I ran about 2 miles today. And no one would give a fuck either.

Your line of work isn't going off your estimates. It's going off calculated conversions that doesn't care what math it has to do.
