I love scallops, despite not liking most seafood in general...

I could just eat them alone... perhaps with some ketchup/bbq sauce (they're breaded, don't@me)

But they really should be part of a mealy dealy

Pasta. Rice pilaf. Maybe some scalloped potatoes. With your choice of vegetable.

For a nice sauce mix some miracle whip, ranch dressing, garlic powder, onion powder and and dill pickle relish. The ranch should be about 1/3 of the miracle whip.

Asparagus.

Meanwhile try scallops a few ways. It's yummy just cooked with butter, but can be delicious with bread crumbs around it as well (with a bit of lemon/lime juice on tip).

The asparagus combo works great though with the butter, and a bit of garlic, look for the very thin asparagus, oil the pan, and fry it (a bit of garlic as well), then once it's getting brownish, put some butter in part of the pan, so you have a ligh coating and add the scallops. You want it to be light yellow to dark yellow/light orange, then flip it and toast the other side.

Will be super yummy.

While I adore a good wellington, I don't like having 2 (or more) meats at once

edit: I mean as separate entrees... 'cuz I do mix beef/pork when making shepherd's pie
