Carol is close for me, as she's a character that had almost no role in the first season and even less role in the comic, but then she went on to become one of the most complex and badass characters in a show that otherwise got progressively more tedious as it went on imo

But Walugi's definitely one of the best examples as well. Premiered in Mario Tennis of all things as a random character slot and now he's all but the face of the Mario spinoffs, as he's become one of the most standout parts of every Kart/Party/etc. game they release

Was gonna vote for Butters, but..,

Popeye himself is perhaps the greatest example of this, actually. The comic strips he starred in began with chronicling the adventures of the Oyl family. Popeye was going to be a one arc gag, but became so popular that he ascended to the main character of the franchise.

Actually, strike that. Make it Squee from Magic the Gathering. The dude was just meant for plucky comic relief as a silly goblin with impossible luck... and then as he gained popularity, he had a huge impact on the actual plot. Through various reasons, he got captured by the enemy, became literally immortal even without his ridiculous luck, unwittingly held one of the final pieces to the Legacy superweapon that saves the world, and even killed one of the most important henchmen (unintentionally).

He's still so popular that in the recent trip back to his home plane, the game designers made a new card for him... even though he has absolutely nothing to do with the current plot. And you can't effectively kill the new card, either. He just keeps coming back.

I would have a favorite character that fits the trope, but even then he's still kind of minor, instead... I think one option really works.

Pikachu (Pokemon)

Wasn't a big Pokemon through R/G then R/B, but the anime gave us Pikachu who became popular enough to sell Yellow, and become a poster child for the series.

I nominate Dolph Ziggler (Professional Wrestling)

Happened twofold with Dolph Ziggler, who first appeared in WWE in 2005 as Chavo Guerrero Jr.'s caddy in the short-lived and controversial Kerwin White gimmick. Once that gimmick was canned, he reappeared as Nicky, a member of the Spirit Squad. He finally debuted as a singles wrestler with the Dolph Ziggler name in 2008, where he eventually became World Champion in 2011.
