It's still a staple in Alaska too. I haven't lived in the Pacific Northwest for nearly a year

True but salmon overcooks very easily


Indeed. There's a fairly narrow window between undercooked and overcooked. It should have almost a buttery texture if you do it right, and flake apart at the slightest pressure.

Somewhere along the line someone didnt do their job

All fresh fish in the US are required to be frozen for at least 48 hours to kill any parasites. Youre seeing more parasites in fish though because their waters are getting warmer and the worms thrive at higher temps

it was.... essentially tasteless, except for the honey/dijon mustard sauce
idk if it was undercooked or overcooked but it was only flaking apart easily in some spots
frozen was the only kind i could get from the store at 11pm so that probably didn't help either

Next time, get a fresh salmon fillet.

Pre-heat the oven to 400 degrees F.
Bake on a pan/cookie sheet (I'd suggest putting foil down), scales side down
If it's around an inch thick, cook for 15 min. If it's closer to 2 inches or thicker, you'll need more time, but risk overcooking portions of it. I'd suggest avoiding a very thick fillet, or if there'll be left overs, eat the less thick portions first, and re heat (in the oven) the rest next time.

That's all you have to do. I bake it and have it on my salad, no seasoning needed.
Or you can put a sauce/marinade on it before baking if you want.

I am pretty sure that all fish in the grocery store is frozen at some point. The fish they have in the display case, was frozen, they just thaw it out and sell it. What you hope for is the flash freeze, where the freeze immediately after catching it.

Unless you live on the coast it is probably not easy to get "fresh" fish.

Its the sorry state of the western world (mostly america) to have been fed prepackaged food for so long people think chocolate milk comes from brown cows.

Its lack of curiosity imho, thats how I got into learning about what goes into my body. Wanting to know where it came from.

Except really. You've clearly only eaten frozen meat like a peasant and can't tell the difference.

Freeze a strip steak or filet overnight, then cook it the next to a fresh one from a butcher and you'll instantly tell the difference.
