I used to really like the Wii for its motion controls, both in games that mainly used motion controls (Wii Sports) and games that just used it for controlling something in a traditional game (swinging the sword in Twilight Princess). In 2011, I stopped gaming on consoles (going for PC and later PC+3DS) until this year when I got a Switch.

As far as games using motion controls go, I've played Splatoon 2, ARMS, 1-2-Switch, and Mario Kart 8 Deluxe (with tilt controls), in several different modes. Consistently, I've found that when I turn off motion controls or use the Joy-Con Grip or Pro Controller (obviously not possible for some games), I've been able to have better control over the game. Sure, I no longer get to physically punch when playing ARMS, but I tend to win more often when I don't use motion controls by using the Pro Controller instead.

Am I just out of it when it comes to console gaming after years of focusing on PC (no motion controls) and 3DS (limited motion controls) or was it just not really worth it all along?

Motion controls have a great casual attraction to them and are worthwhile to explore even still today. That said, more precise controls are king, especially with people like us who played with d-pads and buttons for twenty years before motion controls caught on.

I've said it before but I can't stand playing gamed where you have to aim with stick controls. I prefer the precision of motion aiming.

I feel like this is the case. I don't think that is the primary reason why I stopped playing Wii games (it was due to other things in my life). I absolutely loved the Wii from release until around 2011, even though I found myself only using motion controls for certain gimmicks in games towards my later years of playing it.

Motion controls are great for new types of games, like 1-2-Switch. If I could play that game with a Pro Controller, I wouldn't because it simply makes no sense. But when it comes to a shooter like Splatoon, a racing game like Mario Kart, or a fighting game like ARMS, I don't believe motion controls really add anything. Maybe it does in Mario Kart for some people that liked tilting the controller when it wouldn't do anything in the past, I guess.

For which types of games? For shooters, I actually agree, though I couldn't do it with Splatoon. RE4 was pretty good with it though on the Wii. It was kind of like using a mouse in 3D, which I can appreciate as a PC gamer. I can't control Splatoon 2 properly though, but maybe it will get better when I actually buy it instead of playing the demo.

I think they're great when properly executed (ARMS being the most recent one)

Splatoon though I felt was definitely better with normal controls

I just got done playing the first person hadoken game in Ultra Street Fighter II and that is example of really bad motion controls

I dunno I have a ton of fun playing Wii Sports or Mario Sluggers with the motion controls, like standing up and getting into it. Obviously not all games but some are just stupidly fun if you get into it and don't worry too much.

Wii Sports is great. Mario Sluggers is one I haven't played, but I imagine it works really well with motion controls because you can simulate swinging a bat.

But motion controls in other games often feels forced and unnatural, to me anyway.

Looking back, I don't think that I was able to disable motion controls in Splatoon 2 when I played it. But I found it really bad in handheld mode (then again, I did not have free motion of the Switch since it was at a demo station) but fine though less than ideal using the Pro Controller. I'm always hard on shooters on consoles though since I really like using a mouse to aim - I find GTA games on consoles to be unplayable.
