Yeah the salt enhances anything else you add. I add just a tiny amount to a lot of sweet things in preparation and it makes a big difference.

Since I stopped adding salt to my food, many years ago, any added salt just makes food taste way to salty for me.

Quite a bit of that is opinion. I have nothing against salt in food, just against adding more salt.

Best example I can think of, sea salt chocolate. You're supposed to not taste it and it is supposed to make the chocolate taste better. What do I taste, more salt, less bitter. That's not what I want when eating chocolate, or most things...

Please quote where I "claim" that. A wit pinch of salt in your coffee won't make it salty. The same with oatmeal. Over salting will make anything salty. Every hamburger should be seasoned (it's a cooking term meaning to add salt and pepper), it doesn't make the burger salty and peppery, it enhances the natural flavors in the meat. It's actually the difference between a bland burger and a tasty burger. That's just factual food science.

The presence of sodium increases the activity of salivary amylase, which is responsible for breaking down starch in the mouth.
