Shadow of Mordor has some of the most satisfying shanking ever. The sequel probably does as well, but I haven't played it yet.
State of Decay 2 is great for stealthing zombies, I especially enjoy it with partners, although there are survival aspects you might not be looking for. Aragami is a pretty cool indie title, kind of like Splinter Cell with ninja magic. It's also got co-op, shanking with friends! ... Copied to Clipboard!

shadow of war is fun to stealth and use all the environment stuff.
styx 2 has great stealth, but combat will kill you. you can shove people off ledges, drop things on them, poison them, etc. hitman 2 (though it frowns on non-target kills, or noticed target kills) if you want to stealth and shank, get assassin's creed 4 --- Kill From The Shadows. https://en.m.wikipedia.org/wiki/Idiot ... Mine would be Far Cry 5, even though it's not considered a stealth game. It's got a stealth component and the closest thing to a stealth game I've played in the last 5 years.

you can play shadow tactics very slowly and methodically, basically like a turn based strategy that you can reload at any time. you can pause, queue up actions, and execute them one by one
