There's a couple canonical answers for this.
Dragon Quest had a piece of lore stating that when a monster dies it becomes a gem, and that the gem one day will become a monster again. Others, like Lufia 2, have monster hunting services so it''s not that you're picking up literal gold pieces, but rather are collecting hunting tithes or selling monster parts --- "Salt cures Everything!"
