I've always kinda enjoyed that and now I'm working through the nL Rumblethon and it has whet my appetite for something similar. Bonus points if it's on computer so I can record it, if it's moddable, and if it's y'know actually fun to watch. So far I have:
-Pretty much every wrestling game
-Brant Steele simulators
-Most sports games?
-Civ, I think? And maybe some other 4X games

My cousins and I once spent a whole night doing nothing but creating characters in No Mercy and watching them fight each other. It was sort of like a visual e-fed.

And back when I played the NCAA series a ton, I would usually watch the National Championship game, in the event I wasn't playing in it.

Struggling with a hard opponent? Just use one of those tickets that let's the computer play against the foe and you can watch two computer opponents play against each other. I remember struggling against the final opponent because he was too accurate with his shots (Z; he eats -2's for breakfast), so I used up all my tickets so the computer playing for me would perform better. It worked.

I remember playing a Forza Motorsport game on 360 where you can hire a CPU character to do the race for you. Very nice for the races that take over an hour to complete.

You mentioned wrestling games, but spectator mode is the primary draw for most of the Fire Pro fanbase. I don't think any other fanbase puts such a stake in watching a game as opposed to playing it.

Have you tried starting a game with one player and then setting them as a CPU in the options menu? Pretty sure that's how you do it.
