There's also the fact that if someone with a Katana somehow ended up facing a knight in full armor, they'd probably be screwed. Katana work well enough against Japanese armors, but when you're facing a guy covered head to toe in metal, it's not gonna work too well. Of course, weapon and armor development was and always will be a literal arms race. "I need protection from that" turns to "I need a weapon to pierce that new armor", and then loops back again. Right up until the development of usable firearms where steel plate armor arguably was worse than nothing. Of course, we're really still in the cycle, it's just "find thing to stop bullets and still be able to move" is really fucking hard.

Swords are decentish at every role, but require more training to use. But yeah, if you're doing that, you've probably encountered a problem at some point. But it's a nice option to have since as far as I'm aware swords were usually weighted toward the grip to make them easier to control, so it would make an okay hammer.
Well also japanese weapons were made to use against Japanese armor or lack of. They would have had adapted if they needed to against full plate, they just didn't really encounter it
