Nongshim (Shin Ramyun) and Samyang (Buldak) are Korean ramen brands, which tend to be spicier than other countries. Samyang especially has some blisteringly hot flavors, up to their 3x spicy flavor. Samyang has some milder Buldak flavors that are less spicy than Shin, namely the carbonara and cheese flavors. The carbonara is particularly excellent, but still has a kick to it. Nongshim's Chapagetti is a black bean stew ramen with no spice, and is one of the best of the Korean ramen flavors.
Still, if you're looking for mild, it's probably best to avoid Korean ramen. Indonesia's Mi Goreng flavors tend to be really good, and there's some assorted udon bowls that are worth your while. If there's no Asian market nearby and you don't have much of a selection to go with aside from the major brands, I'd say get the premium ones (Maruchan Gold or Nissin Raoh) over the bottom shelf stuff.
