I'd try a bite. The goat cheese is throwing me for a loop here. I'm sure all the sugar would drown out the goat milk taste but it's a bit off-putting in a dessert (at least without trying it... but I'd try it).

Yes but if you're using that much sugar in the cake itself then the filling doesn't need as much as listed.

On a side note, the sweetner for the cherry filling is now changed from turbinado to coconut sugar, to reduce excess sweetness.

I'm not sure, normal a ganache is a 1:1 ratio between the chocolate and cream and the only time I've seen butter used is if you are starting with milk instead of cream. Of course I've also never seen it done using goat cream so maybe the butter is necessary for some reason?

Red Velvet is disgusting. Red coloring of any kind has a flavor I don't care for, and the chocolate cake recipe without it is often subpar at best. The answer is no.

Depends what you're using it for. Truffles tend to be closer to 2:1, if if you're using it as a sauce going as low as 0.5:1 isn't uncommon.

I've seen some recipes mix soft butter in after the ganache has cooled a bit to give it more of a shine and a smooth texture. That's explicitly not a matter of melting it, though, since you're waiting until you can just cream them together.

Most of those "premium ingredients" aren't going to amount to much because mixing them together in a cake will mask whatever flavours make them "premium." Himalayan salt in particular isn't going to amount to anything in a cake, turbinado sugar is going to be completely indistinguishable from regular brown sugar when mixed into a cake, the higher fat content of duck eggs (the only relevant consideration for cake) can be achieved by just substituting a couple yolks for one of the whole eggs, and you aren't going to be able to taste a difference between goat and cow buttermilk. Also, coconut sugar tastes awful, and Chantilly butter cream (frosting made by folding whipped cream into American butter cream) is an absolute bitch to make because it separates if you blink too many times (and doesn't taste good enough to justify the effort). Just stick with regular whipped cream and get around the structural concerns by piping the cherry filling and whipped cream in spirals between layers.

Why don't you actually make these recipes instead of asking people to refine your AI model for you?

I like red velvet, and I like black forest cake, but putting it together sounds a little too rich for me personally. I also can't stand goat cheese. How was it?
