You can usually find that kind of info in your platform's privacy policy. The answer is generally yes, or it takes a while to fully flush from their systems.

I think SMS just never deletes anything.

But it presumably works the same way that data in your local computer does. ie, when you "delete" something it's still there (and potentially retrievable), until it's overwritten by new data.

So it's probably a case of:
