Those fries have the typical mealy texture on the inside but the outside is soft and the fries are limp. But they are delicious. apparently part of the issue with in n out may lie their potatoes. And the burgers are great for their value (very hard to find better tasting burgers as fresh as In n out with their price point). Is it the best burgers in the world? Skip the blanching and they'll never be cooked internally without burning them. The well done basically just holds off the starch softening for a little longer. They are still undercooked and need to be eaten ASAP. Also they don't even salt the fries after frying them. Which is key.
