Those are California lies!

Both Dicks Drive Inn in western Washington and D. Lish hamburgers in Spokane are fresh never frozen, with fries made same day and you can watch them do it.

Those fries have the typical mealy texture on the inside but the outside is soft and the fries are limp. But they are delicious.

apparently part of the issue with in n out may lie their potatoes. They apparently use some variety that no one else uses. The shitty taste of in n out fries is apparently intentional.

Dick's fries are great, no doubt. They even put out notices when they're short on Washington state potatoes.

the burger freshness varies quite a bit. In-N-Out burgers are better.

That's a poor fix at best. French fries need to be soaked, blanched, cooled, then fried again to have a proper crispy outside, smooth inside. If you skip the soaking they'll be too starchy and become soft and gummy. Skip the blanching and they'll never be cooked internally without burning them. The well done basically just holds off the starch softening for a little longer. They are still undercooked and need to be eaten ASAP.

Also they don't even salt the fries after frying them. Which is key. Once the oil cools the salt doesn't stick.

So which fast food joints actually do this?

Basically all of them. The soaking and blanching is done. The blanched fries are then frozen. When it's time to serve fries the pre-prepared fries are fried for the final time. In-N-Out's insistence to not use frozen food here is silly. While it might make sense for meat it literally makes a worse fry as freezing them doesn't harm them at all.

It's probably the best burger in its price range. Five Guys is like 3-4 times more expensive depending on what you buy lol.
