I personally don't mind the mini-games in Pokemon S/V although some of them were kinda bad (I'm looking at you Iono and Tulip). But overall I think the second approach is better.

I think SV's style has the most potential, especially ones that get you to interact with the city they are in like Larry's or Brassius's. The minigames probably should go, though.

straight battles. it gives one time to get a feel for what the Gym Leader will be like, and gives the team more experience

Probably the first. Second one is fine too. S/Vs approach has been dumb so far, but Im only 2 badges in and the first two mini-games were lame

i enjoy the "sidequests" - stuff like silph co before sabrina, or needing the 7 badges before giovanni, or going through cinnabar mansion before blaine

how did S/M handle it? was unaware they did something so radical there

They don't have gyms, they have "island trials", which is basically a relatively lengthy side quest (for example, gathering ingredients in a forest while battling wild Pokemon) before you can challenge the Island Trial Captain (which is functionally similar to a gym leader, but there's no 8 of them and they don't give badges).

You don't actually battle most of the Trial Captains as part of the trials. Trials end with a battle against a Totem Pokemon, which is a pokemon of the Trial's type that has a stat boost and can call in backup to make the battle 1v2.
