Besides the people there do eat Pokmon meat. At the very least, they eat Slowpoke tail. There's also some other references to humans either eating Pokmeat or at least thinking it'd be tasty if they did.

All I know is that they can grow big, and they're strong enough to jump out of the water and climb up streams like real life carp.

So because of their size and all, I would assume they be no more different than eating carp/trout or any other kinda of fish

The comparisons to real-life animals in the pokdex are there for the players benefit, not to be taken as in-universe Pokmon canon. Pokmon are literally the animals of the Pokmon world, it's been well established at this point.
