I don't see why everyone is saying not to eat it. I regularly leave out whatever meat I'm going to cook for supper all day while I'm at work. I'll sit it out about 7 in the morning and it'll be 7 or 8 or 9 at night before I get home. Nothing has ever happened to me from eating it anyway.

I prefer to leave it out in the fridge overnight. Sometimes I'll put it in cold water to help a bit, the slower you dethaw it the better and less rubbery it tastes imo.

But there are certain meats I never freeze, such as steak or fish as it just tastes way better purchasing it say before or of and cooking.

I think you're supposed to leave it in the fridge overnight. Its still usually pretty frozen when I do that though

Typically I put it in a bowl of cold water for 2ish hours. You can also just put it in the fridge the day before cooking.

If it was still cold, you should be fine. The main questions: is the chicken slimy, odorous, or discolored like greenish or yellow?

If not, you're fine. Cook it and make sure internal temperature is 165 degrees farenheit or more.

Hell, I've left chicken out for longer and cooked it and been fine (left it out by accident).

This. Yeah it's not preferrable to leave it out that long but as long as it looks fine and doesn't smell, you're good. Just make extra sure it's cooked thoroughly.

What is proper procedure for defrosting?

Chef here. You don't want any kind of meat to reach a temp above 40 F for very long before cooking. 40 F is the point where you start seeing rapid bacteria growth that can ruin meat and cause food poisoning. The safest way to defrost meat is to move it from a freezer to a fridge that will keep the meat between 33 F and 39 F (so just above being frozen but below the red zone for bacteria growth). This can take quite a bit of time, though, since it is a very small change in temp. A faster way is to put the meat in a sink with cold running water over it (preferably in a ziploc bag or wrapped in saran wrap). Running water, even cold, can thaw meat very quickly. It is actually faster than just letting it sit out and as a result foods typically will not be out of refrigeration long enough to really start growing bacteria. You don't use hot water to thaw unless you're on standby ready to toss the meat into a pan immediately because hot water will unevenly thaw the meat and the outer edges will quickly be pushed into the red zone while the center is still slightly frozen.

It is worth noting that lots of stuff can just be cooked frozen, especially like hamburger meat for tacos and the like.

As to the quality of frozen meat, if you've ever eaten at a restaurant basically anywhere you've almost certainly had meat that was shipped to them and stored frozen before thawed out to cook. Restaurants typically get in 1 truckload of food per week, will keep out in regular refrigeration anything they will use in the first 3 days, and then freeze anything for use later in the week to pull and thaw as needed. If it is done properly you'll never know the difference since freezing for short periods of time (in this case anything less than a month or so) doesn't really affect quality as long as it is packaged properly (you don't want ice crystals forming directly on food. Packaging is ok but no ice ON the food).

If you follow the same concepts at home you can bulk buy meat without concern for its quality. Make sure it is packed tight so as little air can get in it as possible because moisture in the air of the packaging can frost over and damage the meat. Using a vacuum sealer is ideal if you have one. Also don't leave stuff in the freezer for more than a couple of weeks for best quality

The danger zone for bacteria growth in food starts at 40 F, which is still extremely cold to touch. If this happened in my kitchen at work that chicken would go in the trash as per health code.

To all the people saying they'd cook it, they do this all the time, etc: Cool, I'm glad nothing bad has happened to you but this is playing Russian Roulette with salmonella instead of bullets. Cooking to 165 F is not guaranteed to kill all bacteria and shit growing on meat, which is why you are supposed to reduce potential growth as much as possible

I would suggest a quicker cooking method. Its already sat for a long time. A slow cooker lets it sit even longer before getting to cooking temp. Better to grill it or bake it or even fry it.

Yup. We bought a vacuum sealer for that reason. We do a Costco run for meat once a month and vacuum seal each portion. Store some in the fridge a few days and freeze the rest. Just toss a couple of bags in the fridge the day before cooking. Very easy and cost effective.

As long as its properly cooked, youll have nothing to worry about. Are we talking about American factory farmed chicken? They are always chick full of germs thanks to the dirty conditions where they are raised and slaughtered. If proper cooking wasnt effective at killing pathogens wed all be getting samonella on a weekly basis.
