Too many negative posts this weekend.
People probably not reading the anime thread where I post most of the things I like so, for the record over the past 2 months I have been playing some of the older Atelier games. So far I have played Ayesha, Escha and Logy, Shallie, and I'm now starting Rorona. All of them are very fun.

I've been wanting to try one of them, and want to get one of the 40 dollar ones on the Switch. Which one would you recommend?

I've only played the older ones, people usually suggest starting with Ryza or Sophie but I haven't played those yet. The two that I'd suggest (Rorona / Ayesha) are both outdated as each game's systems get incrementally more tuned.
I need to play more games to answer that.

I read the whole thing and I'm kind of disappointed that they don't have much fanservice. I'll prolly try one of them anyway, and I hope it grabs me.

Depends on what you call fanservice.
So for example, in the Dusk trilogy, characters from Ayesha appear in both Escha & Logy and Shallie as all 3 games exist in the same universe.
This is a common trends in the other series.
If you mean characters in game sexualizing Ryza (or the other girls, given the example on that page). No that does not happen in the games I've played so far.
There is 1 bathing suit scene in Shallie where all of the girls of that game are wearing bathing suits.
