because whatever extra calories the frosting has is less calories than whatever they omit

unfrosted seem to have twice the fat. I suppose that means they have more pastry.

given the miniscule differences for each, it's more healthy to eat a regular poptart

like neither are healthy, but when compared to each other one is more healthy

frosted even has more vitamins and minerals

Going by that, unfrosted has 10g fat (90 cal), 69g carbs (276), and 4g protein (16), for a total of 382 calories. Frosted has 9g fat (81 cal), 70g carbs (280), and 3g protein (12), for a total of 373 calories. The numbers check out, with a bit of rounding to the nearest 10 (bearing in mind that the individual numbers are also likely rounded).

The serving size is the same, so if the frosting is being removed, that means more of some other component must be added to make up the difference. Adding more pastry is likely to be cheaper than adding more "fruit," so you get extra fat and flour (which contributes the extra protein and non-sugar carbs). This makes such a large difference because fats are over twice as energetically dense as carbs and protein (9 cal/g vs. 4).
