My overall favorite is yellow, which to me is the most versatile.

Most of those have a place, but if I was going to pick a 'universal' mustard it would probably be brown mustard.

Honey mustard is the best.
Brown and regular mustard are fine. I also loved the "dijon dill" mustard dressing I had at a restaurant, I keep meaning to look up recipes to make it myself since no one sells it... I like all of those mustards. But I like Chinese hot far more than any other kind of hot mustard.

Grey Poupon made a cracked black pepper Dijon mustard back in the 1990s that was SOOOOOOOO good I would literally eat it with a spoon. Then they stopped making it and I haven't been able to find ANYONE who makes anything even remotely similar.

You have excellent taste. When I was a kid there was a restaurant that had an assortment of Inglehoffer mustard on the table and had a little store attached where you could buy it. Then they closed and you couldn't find it anywhere for years and it was only relatively recently that I started to see it carried in normal grocery stores.
